Emmer Spelt is an ancient cereal known and cultivated already by the Etruscans and Romans. Energetic and rich in vitamins, it contains fewer allergenic substances than wheat, making it useful for people who have little tolerance to the latter. It is defined as a rich cereal due to its high protein and fiber content; also very suitable for athletes. This flour is suitable for the preparation of sweet and savory foods and by its nature it is especially suitable for preparations such as pasta, pizzas or piadinas. Being a "heavy" flour, it is suitable for products that do not require significant leavening.
