The hulled spelled should be soaked for a few hours. You can then proceed with cooking, which can be done in the salted soaking water itself for 35 minutes. It can be used to prepare soups, or boiled and used for sautéing vegetables or cold for salads. It can also be prepared like a risotto. The dose for soup is 30 – 50 g per person while for dry preparation or as risotto it is 80 grams. Its particular flavor is enhanced by pairing it with different types of pesto and fish. It pairs well with all vegetables, but also with legumes such as beans or lentils. It is also used as a filling for tomatoes, onions, aubergines and peppers. The use of cooked grains in the preparation of breads and focaccias is very interesting, giving them softness over time, or as a replacement for wheat in desserts such as pastiera.
